Barnard Griffin Cabernet Sauvignon paired with Pancetta Deli Sandwiches

You can really tell the seasons are changing when one week you’re reviewing Rosé, the next week it’s Sauvignon Blanc, and the next it’s Cabernet Sauvignon. This Cab is another out of the box one from our wine club with Barnard Griffin. This marked one of the first nights that it actually felt a bit chilly. It was rainy most of the day and by the evening; we were just looking forward to some comfort food. Luckily, we had some Pancetta and my husband felt like frying it up.

Cabernet Sauvignon feels like a comfortable old stand-by at this point, so it seemed natural to want to pair it with a comfort food meal. When you think Cabernet Sauvignon, you usually think red meat, but that does not always have to be the case. This wine will also be paired on occasion with lamb or ahi tuna, so be on the lookout. If you’re really looking for something interesting though, try pairing it with a blue cheese turkey burger. You’ll save on the red meat while getting some great flavors out of the wine thanks to the cheese.

This wine was from Richland, Washington and sampled on September 6, 2019. I was listening to “Yesterday” by Ray Charles. The scents of very dark fruits and purple flowers wafted up from the glass. The first taste brought an oaky, cherry barrel flavor. The longer the wine sat out, the deeper and smoother the flavor became. The wine was absolutely delectable with the sandwich. It was very easy drinking. This wine also had lots of long legs. Its acidity was low and the body was medium.

I gave this wine a rating of 4.0. This was a great wine. Both my husband and I went in for a second glass to enjoy after our meal.
