Cumulus Wines Sauvignon Blanc Semillon paired with a Hatch Green Chili Sausage and Parmesan Green Beans

This week has been such a whirlwind! From Dallas to Seattle and back again, we toured so many houses and apartments that we could barely keep them all straight. So, when I sat down on a Tuesday night to finally have a wine tasting again, it felt like I was getting my groove back. The label of this wine perpetuated that same feeling. Five friends depicted on a sunny day just sitting outside and enjoying the weather. This is how I could picture myself a few months from now after we would be all moved and able to relax again.

The Five Friends on the label are representative of the five different grape varieties that go into making wines for this label. These include, Cabernet Shiraz, Semillon, Sauvignon Blanc, Merlot, Rosé, and Chardonnay. * This wine in particular consists of 80% Sauvignon Blanc and 20% Semillon.

Wines grown in the Central Ranges region of Australia like this one are all in a cooler climate with a higher elevation. Because of this, they have been known to produce more fruit-forward wines because of the extra time that must be spent on the vine. The vines also produce less in terms of volume than warmer climate vineyards. *

This wine was from the Central Ranges region of Australia and sampled on April 10, 2018. I noted the nearly clear color and then the very clean scent. It made me think of fresh sheets that had just been hung up on a line to dry. With a few swirls of the glass I could also smell a fuzzy apricot. I was listening to “James Has Changed” by Phoebe Ryan. My first taste was surprisingly juicy. I thought with the clean scent it would be more acidic. It was kind of lush on the tongue, like there was a softness to it. Tastes of green apple and green pears were also present. It was just okay with the hatch green chili sausage. I think a little more acidity would be better. It paired nicely with the green beans however.

I gave this wine a rating of 2.5. It just seemed to be missing something. It could have been the lack on any acidity at all, but it just wasn’t for me. If you don’t enjoy an acidic white though, you could definitely count on this wine to deliver.
